Kid-approved super easy, colorful and healthy platter

Have you seen our St. Patrick’s Day Yummy Leprechaun Hat? Do you want something healthier? No problem! Our mamas wanted to share this super easy, colorful and healthy platter with our MacKid Families.


Ingredients:

  • - 16 ounce container plain hummus
  • - 12 ounce bag of broccoli
  • - 1 large green bell pepper
  • - 6 ounces of large black olives
  • - 1 yellow bell pepper
  • - 2 thin cucumber slices
  • - 1 cherry tomato
  • - 1 lb of fresh carrot chips
  • - 12 ounce bag cauliflower
  • - 1 orange bell pepper strip
  • - 1 red bell pepper strip
  • - 6 ounce box pita crackers

DIrections:

  1. Use a 20”x13” platter, cutting board or sheet pan. Place an 8.5” bowl in the center of the platter. Fill the bowl with the hummus.
  2. Place broccoli on top of the plate, making it a rectangle (to make the hat).
  3. Slice a piece the bottom of the bell pepper (set aside), slice another piece ¼-inch thick for the shamrock. Remove seeds and slice the top off. Cut the remaining into strips. Place them on both sides of the broccoli, making the rim of the hat.
  4. Slice half of the olives in half, lengthwise. Lay them flat across the middle of the broccoli (just above the bell pepper rims).
  5. Slice the yellow bell pepper in half. Cut a square shape out and place it in the middle of the black olives belt, place an olive half on top of the square.
  6. Cut 2 cucumber slices and place them on the hummus to make the eyes. Cut 2 circles out of an olive and place on top of the cucumber. Add 2 pieces of carrot chips above the cucumber to make the eyebrows. 
  7. Add 1 cherry tomato to the middle of the hummus bowl for the nose. 
  8. Shape 6 black olives halves in a smile shape. Cut one olive half in half and place on either side of the smile.
  9. Arrange the carrots chips from the base of the hummus bowl down to almost the bottom of the platter. This will create the Leprechaun’s beard.
  10. Place the cauliflower in the upper left and right corners of the board. Place the green pepper slice that looks like a shamrock (previously saved) on top of the cauliflower(on the left), add a little piece of green bell pepper for the stem.
  11.  Place strips of red, orange, yellow and green bell pepper on the cauliflower in the right corner. 
  12. Place the remaining black olives at the bottom of the platter, under his beard.
  13. Place the pita crackers on both sides of the Leprechaun’s face bowl.
  14. Serve and have FUN!!

Note: You can cut the leftover veggies and add them to a separate platter.
