Introducing Lasagna Soup – a twist on the classic lasagna that my family loves.
When my 14-year-old told me she wanted to make this hearty one-pot Lasagna Soup, I encouraged her to make her own sauce, rather than using a jarred version.
We always encourage our kids to participate in not only planning meals, but actually cooking meals as often as they'd like. This is an awesome way to teach independence, get kids to try new foods, and learn their way around the kitchen. In addition, it gives the parents the night off of kitchen duty!
This Lasagna Soup, a perfect fall warmup, was a great recipe for her to make because it only uses one pot. It turned out delicious!

Lasagna Soup
Ingredients:
- 1 lb lean ground turkey or ground beef
- 1 lb ground spicy Italian sausage
- 1 box of pasta of your choice (my kids like spiral noodles)
- 8 cups chicken broth
- 1 cup milk
- 2 cans of tomato soup
- 2 cups water
- 8 oz shredded mozzarella cheese OR mozzarella pearls
- Shredded parmesan cheese
- Fresh spinach (as much as you'd like. We used two handfuls)
- 1/4 tsp red pepper flakes
- Garlic powder or garlic salt, to taste
- Onion powder, to taste
- Oregano and/or Italian seasoning, to taste
- 1 Tbsp white vinegar
Optional Ingredients:
- 1 chopped onion
- Chopped sun-dried tomatoes

Directions:
- In a large soup pot over medium heat, brown ground turkey/beef and Italian sausage until done.
- Add vinegar, oregano, Italian seasoning, garlic, onion powder, onion (if using), tomato soup, and water and simmer for a few minutes. Taste it and it should be easy to tell what seasonings you might still need to make it "taste like lasagna" – we usually end up needing to add more garlic and oregano to make it perfect.
- Once the meat sauce is to your liking, add the chicken broth, red pepper flakes, milk, and sun-dried tomatoes, if using, and bring to a boil while stirring occasionally.
- Once the soup is boiling, add the pasta and boil following the time on the pasta package.
- About 2 minutes before the pasta is done, add spinach and mozzarella cheese.
- Add parmesan cheese to each serving, as desired.
